Black Garlic Smoked Meatloaf

National BBQ Day is almost here so Grilla and MEAT! are partnering up again to bring you wild new recipes that introduce ingredients we’ve never used before!

First up is our Black Garlic Smoked Meatloaf; it’s the perfect way to learn how to cook with this funky new ingredient you can find at most grocery stores! If you’ve never heard of it, black garlic is just normal garlic but aged in a special environment, sort of like some cheeses. It’s got a sweet and funky taste that adds deep umami flavor to pork and beef especially.

Prep Time: 25 Minutes

Cook Time: 2-3 Hours

Estimated Servings: 4-6 People

INGREDIENTS:

  • 1lbs. Ground Sausage
  • 1.5lbs. Ground Beef
  • ½ lbs. Bacon
  • 1 Egg
  • 2 Cloves Garlic
  • 2 Cloves Black Garlic
  • ½ C. Mushrooms (Shiitake preferably)
  • ¼ Red Onion
  • 4-6 Dashes Worcestershire Sauce
  • 2-4 Dashes Balsamic Vinegar
  • ½ C. Thick & Bold BBQ Sauce
  • ½ C. Beef Broth
  • Kosher Salt
  • Cracked Black Pepper
  • 1Tbsp. Garlic Powder
  • 1Tbsp. Onion Powder
  • 1Tbsp. Paprika
  • ½ C. Breadcrumbs (Adjust to your preference)

Recommended Optional Toppings:

  • Avocado
  • Black Beans
  • Sour Cream
  • Cotija Cheese
  • Serrano or Jalapeño Pepper

Directions:

  1. Preheat your smoker to 240 degrees.
  2. In a large bowl, combine your sausage and ground beef.
  3. Add 1Tbsp each of salt, pepper, paprika, garlic powder and onion powder. Mix thoroughly.
  4. Add Worcestershire sauce, balsamic vinegar and egg to the meat and mix again.
  5. Begin to add your breadcrumbs to the meat and mix throughout the process. Stop when you’ve reached your desired texture.
    • More breadcrumbs will soften the meatloaf and give it lighter texture.
    • Less breadcrumbs will make the end result a bit tougher, closer to a burger or meatball texture.
  6. Salt and pepper your meatloaf one more time before putting it on the smoker.
  7. Allow the meatloaf to smoke until it reaches 160 degrees internally.
    • Now comes the fun part, making our black garlic BBQ sauce to top our meatloaf.
  8. Start by peeling and lightly dicing your onion and both types of garlic.
  9. Wash and chop your mushrooms, then set them aside with the other ingredients for now.
  10. On the stove top, cook your bacon until it is lightly crunchy and remove it from the pan.
  11. Drain most of the grease out of the pan, but reserve enough to cook our onion, garlic and mushrooms in
  12. Begin sauteing the onion, normal garlic and mushrooms using the same pan you cooked the bacon in, on medium heat.
    • While cooking make sure to scrape the little bacon bits off the bottom of the pan to improve the flavor of our sauce.
  13. Chop the bacon you cooked into small pieces.
  14. Once the ingredients begin to brown, add the black garlic and bacon to the mixture and fully incorporate it.
  15. Reduce the temperature a bit and add your beef broth to the pan.
  16. When it begins to simmer, add the Thick and Bold BBQ Sauce and mix thoroughly.
  17. Simmer the sauce for roughly 5 minutes, stirring enough to keep it from burning.
  18. At this point, it comes down to your preference for the thickness of your sauce.
    • To make it thinner, add beef broth until it reaches your desired consistency and then remove it from the heat and cover it.
    • To make the sauce thicker, add more BBQ sauce and continue to simmer until it reaches your desired consistency, remove it from the heat and cover it.
  19. Once your meatloaf has reached 130 degrees, baste it with a layer of the black garlic BBQ sauce we made. Feel free to do this a couple more times while it comes up to temperature.
  20. Remove it from the smoker and coat it with the rest of our black garlic BBQ sauce once it reaches 160 and allow it to rest for at least 5-minutes.
  21. Slice into the meatloaf, serve and enjoy! Don’t forget to take a pic and share it with us on Reddit or Facebook!
