Family Style Herb Butter Sous Vide Sweet Potatoes

Sweet Potatoes are a staple of Thanksgiving and Holiday Dinners around the nation and the Chef’s from MEAT! are ready to share their famous recipe. We’ll peel our sweet potatoes, season them with a combination of salt and herbs then slowly sous vide them until they’re soft and creamy.

You can make these nice and chunky or add some cream and extra butter for a smooth decadent sweet potato side. This version of the recipe is savory and meant to be enjoyed as a side dish with your holiday dinner.

INGREDIENTS:

  • 3 Sweet Potatoes, peeled
  • Kosher Salt
  • Finely Ground Black Pepper
  • Fresh Rosemary
  • Fresh Thyme
  • Fresh Dill
  • ½ Tsp. Turmericl
  • ½ Tsp. Dried Dill
  • Fresh Dill
  • 4-6 Cloves Garlic
  • 2 Sticks Butter
  • Sesame Oil

EQUIPMENT

  1. MEAT! Sous Vide Cooker
  2. MEAT! Sous Vide Bags
  3. Large Mixing Bowl

Instructions:

  1. Place the MEAT! Sous Vide cooker in a tall pot and fill the pot with warm water above the minimum fill line. Set the sous vide temperature to 195°F.
  2. Thoroughly wash and peel your sweet potatoes.
  3. Dice your sweet potatoes and place them in a large bowl. Set them aside for a moment.
  4. Dice your garlic and add it to the potatoes.
  5. Add a small amount of sesame oil to the bowl and toss to coat your garlic and potatoes in it.
  6. Add in salt and pepper and continue to toss until the sweet potatoes are lightly coated in seasoning.
    • Pro Tip: Be careful with seasoning, you can always add more later but you can’t take it away once added.
  7. Add your seasoned sweet potatoes to a properly sized sous vide container and add 1 sprig of each fresh herb you’ve gathered for this recipe.
  8. Cut a stick of butter into chunks, then add it to the potatoes and herbs so it’s evenly spread throughout the sous vide bag.
  9. Place the sealed sweet potatoes, herbs and butter into your sous vide bag then place them in the bath and allow them to sit for at least 2-hours.
  10. Once your potatoes have finished cooking remove them from the sous vide bag and place them back into a large mixing bowl.
    • Remove all of the herb sprigs, no one wants chunks of fresh herb in their sweet potatoes.
  11. Add your turmeric and dried dill, then mash your sweet potatoes.
  12. Taste your potatoes and then add more seasonings as you feel are needed. Salt or pepper may be needed, but feel free to add anything else you think your guests would like.
    • Feel free to add more butter now if you’d like as well. If you prefer a creamier mashed sweet potato, don’t be afraid to add a small amount of cream while you mash.
  13. Finally, your savory sweet potatoes are ready. Place them in a serving tray and serve them as a side for your Thanksgiving or Christmas dinner!
