CARDAMOM COFFEE BITTERS & BOURBON COCKTAIL

 

For all the cocktail connoisseurs, this easy bitters recipe is for you! This recipe creates depth and flavor that seems like it was cooking for hours. It’s the perfect addition to your bourbon cocktails.

 

CARDAMOM COFFEE BITTERS

 

SOUS VIDE TIME: 1 HOUR

PREP TIME: 5 MINUTES

SERVINGS: 1/2 CUP

 

EQUIPMENT NEEDED

 

· MEAT! Vacuum Sealer

· MEAT! Sous Vide Cooker

 

INGREDIENTS: CARDAMOM COFFEE BITTERS

 

· 1/4 cup whole dark roast coffee beans

· 15 green cardamom pods, lightly cracked and toasted (optional)

· 1t black peppercorns

· 3 whole cinnamon sticks

· 1/3 cup dark rum

· 2 whole cloves

· 2T brown sugar

CARDAMOM COFFEE BITTERS

 

SOUS VIDE TIME: 1 HOUR

EQUIPMENT NEEDED

 

· MEAT! Vacuum Sealer

· MEAT! Sous Vide Cooker

 

INGREDIENTS: CARDAMOM COFFEE BITTERS

 

· 1/4 cup whole dark roast coffee beans

· 15 green cardamom pods, lightly cracked and toasted (optional)

· 1t black peppercorns

· 3 whole cinnamon sticks

· 1/3 cup dark rum

· 2 whole cloves

· 2T brown sugar

DIRECTIONS:

 

Preheat your sous vide water bath to 131°F.

 

Place the shrimp, 3 tablespoons of butter, garlic, and chili paste in a vacuum seal bag. Vacuum and seal the bag.

 

Once the water is to temp, add the bag to the water and cook for 20 minutes.

 

While the shrimp is cooking, add the reserved 2T of butter to a large pan set over medium-high heat. Add the jalapeno, jicama, lime juice and chili powder. Cook for about 5 minutes. Then when the shrimp is done cooking, add the entire contents of the bag to the pan, toss everything to combine and cook for about 3-4 minutes, or until the sauce is slightly thickened. Sprinkle the chopped cilantro on top, then serve.

DIRECTIONS: CARDAMOM COFFEE BITTERS

 

Preheat your sous vide water bath to 140°F.

 

Place all of the ingredients in a vacuum seal bag. Vacuum and seal the bag. Once the water is to temperature, place the bag in the water and cook for 1 hour.

 

Remove the bag from the water and let cool for about 30 minutes on the counter. Once the bag is cooled, strain the liquid and toss the solids. Place the liquid in a glass bottle for storage.

 

BOURBON COCKTAIL

 

INGREDIENTS: BOURBON COCKTAIL

SERVINGS: 1 COCKTAIL

 

· 2 oz orange juice

· 1 brown sugar cube

· 3 oz bourbon of choice

· 1 oz cinnamon simple syrup

· 3 dashes cardamom coffee bitters

· Cinnamon stick for garnish

 

DIRECTIONS: BOURBON COCKTAIL

 

In a cocktail glass muddle the sugar cube with the orange juice. Then add the bourbon, simple syrup and bitters. Stir to combine. Then add in a large square or round ice cube and garnish with a smoked cinnamon stick.
