Smoked Prime Rib Sliders
If you need to make a massive meal for a big BBQ this summer, pull out this recipe for Smoked Prime Rib Sliders. This recipe uses MEAT! and Grilla gear to make a huge platter of rich, sweet and spicy chopped prime rib sandwiches served on mini Hawaiian buns.

INGREDIENTS:
- Whole Boneless Ribeye
- Kosher Salt
- Cracked Black Pepper
- Garlic Powder
- Onion Powder
- Paprika
- Cumin
- Sesame Oil
- ½ Tbsp. Thyme
- ½ Tbsp. Rosemary
- ½ Tbsp. Dried Dill
- 2 Sticks Butter
- 6 Cloves Garlic
- ¼ C. White Onion
- 1 Bag of Hawaiian Buns
- Stone Ground Mustard (Optional)
- Pickled Jalepeno (Optional)
- Shredded Mozzarella Cheese (Optional)
EQUIPMENT
- MEAT! Slicer
- Primate Gas Grill and Griddle or your regular stovetop
- Grilla Pellet Smoker
Instructions for Day 1:
- We’re going to start this recipe the day before we plan to serve our sliders.
- Preheat your smoker to 220 degrees and get your gas grill roaring on high heat.
- Remove the silverskin from your prime rib and coat it with a light layer of oil.
- Coat the entire prime rib in a layer of Kosher salt, cracked black pepper, garlic powder, onion powder, paprika and cumin.
- Using the gas grill, or stovetop, sear your prime rib on all sides.
- Remove the prime rib from the heat once seared and place it on the smoker.
- Allow the prime rib to smoke to 125F, then remove it and rest for 20-minutes.
- When cooled, cover the prime rib and allow it to chill in the fridge overnight.
Instructions for Day 2:
- Pull out and set up your MEAT! Slicer, we want to make the thinnest slices possible.
- Set your pellet grill to 200-degrees.
- Slice your prime rib then set it aside for now.
- Peel and lightly dice your onion and garlic.
- Open the package of Hawaiian buns and slice the entire thing in half like it were one giant bun. Set this aside for now.
- On the stove top, using a small amount of your butter, sauté your onion and garlic until lightly browned.
- Place the rest of your butter in a small bowl with your thyme, rosemary and dill.
- Add your browned garlic and onion to the butter and mix thoroughly.
- Now it’s time to build our sliders, start by putting your slider buns on a large baking tray.
- Next lay down a layer of stone ground mustard onto the buns.
- Next add as much prime rib as you like, then top it with your other ingredients.
- We like to add pickled jalapeños, mozzarella cheese and sliced white onion.
- Put your top bun layer on, then coat the entire bun layer in your garlic herb butter.
- Place the entire assembled tray into your smoker and allow it to cook until the top layer begins to become crispy as you like.
- Pull the tray off the grill, separate the sliders and serve!
