What’s the difference between fine and coarse ground meat?

By Dominic Trimboli

Should I use coarse or fine grinding plates?

So, you’ve got a brand new MEAT! grinder and you’re wondering which grind plates to throw on first; coarse or fine grind? Lucky for you our crew of experienced meat processing masters know their way around a grinder, and we’ve got the breakdown of which to use down below!

Should I use coarse or fine grinding plates?

When you’re choosing which grind plate to use your first step should be determining what you plan to use your ground meat for when you’re done. The two plates will make a significant difference in how your meat will turn out, and you should choose your plates accordingly.

Fine grind plates will create a smaller grain and is the most common grind you’ll find when you’re shopping at the store. Finely ground meat will not hold its shape as well as coarse ground meat and will be easier to mold into burgers or meatloaf. Fine ground meat is great in snack sticks, pasta sauces or sausages.

Coarse grind plates will create ground meat with a larger grain that will hold its shape better. Coarse ground meat is perfect for stews, chili, tacos and any other time when you want your meat to stay chunky. Usually, coarse ground beef is easier to find at a local butcher than the grocery store.
