CHIPOTLE DEER JERKY

    I'm a big fan of jerky, and I recently decided to make my own. I followed Hank Shaw's Chipotle Deer Jerky recipe and used my trusty MEAT! Dehydrator to bring it all together.

INGREDIENTS

  • Five pounds of venison roast
  • 1 cup soy sauce
  • 2/3 cup sugar
  • 1 cup chopped onion
  • 1 garlic clove, peeled and roughly chopped
  • A 7 ounce can of chipotles in adobo
  • The juice of 2 limes
  • 1 teaspoon of Instacure No. 1 (use at your discretion but recommended for safety)
  • 2 tablespoons salt

EQUIPMENT

  1. MEAT! Dehydrator

INSTRUCTIONS

  1. Mix together all of the ingredients and marinate the venison overnight, as per Hank's recipe
  2. Using the MEAT! Dehydrator, set the temperature to 155°F and let the machine do its job.
  3. The result is excellent deer jerky with a rich, smoky flavor that is a real crowd-pleaser. The combination of the chipotle and adobo gives the jerky a nice heat, while the soy sauce and sugar brought an addictive sweet and savory element.
